This is a great side dish that can be paired with any meat and work great. It can also be a great main dish if that's what you like.

Ingredients
  1. 1 1/2 pounds new potatoes, cut into 1-inch pieces
  2. 3 tablespoons extra-virgin olive oil
  3. 2 tablespoons grated Parmesan cheese
  4. 1 tablespoon chopped fresh rosemary
  5. salt and ground black pepper to taste
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Line a baking sheet with aluminum foil.
  3. Mix potatoes, olive oil, Parmesan cheese, and rosemary in a bowl.
  4. Season with salt and pepper.
  5. Spread potato mixture over prepared baking sheet.
  6. Bake in preheated oven until potatoes are golden brown and tender, stirring once half way thru cooking process.
Notes
  1. You can do so many things with a potato. Don't be afraid to try new things.
