Sure you can make mom scrambled eggs and bacon for Mother's Day. You can even present her with a store-bought muffin and coffee.  But if you're looking to whip up something a bit more special on May 11th for breakfast in bed, try these creative ideas from local chefs. SALMON FILLET Take a salmon fillet and season it with salt and drizzle with maple syrup. Allow to sit overnight in refrigerator with chili peppers and garlic. Bake the fillet. Flake it and add chopped herbs such as chives. Mold the flake salmon into a patty and top with a poached or fried egg. Make toast and add butter and lemon zest. Roughly crumble the toast over the egg. “It's super simple and kind of healthy. CREPES crepe Make ham and cheese stuffed crepes. First, make crepe batter with eggs, flour and some milk. Add grated zucchini, squash or mushrooms. Ladle crepe batter into pan. Lay the crepes out flat and add cheese such as Gruyere or Jarlsberg, ham and spinach, you can add any types of fillings, and roll up. Bake for about 20 minutes at 350 degress with more grated cheese on top. Top baked crepes with a mixture of Dijon mustard, honey and sour cream or plain Greek yogurt. You also can make and roll the crepes the night before and bake off in the oven in the morning. QUICHE quiche Buy two frozen pie shells at any grocery store and bake off for about 10 minutes. Add a mixture of about five eggs to two cups of cream and add fillings such as feta, spinach and sun-dried tomato.  You can add any types of fillings from breakfast meats and cheeses.  Fill the two baked pie crusts with the egg mixture and bake for about 40-50 minutes at 350 degrees. “If you take the pan and jiggle it and it looks like Jello, it's done. If it's not done, it will look like ripples in the water OTHER IDEAS Make a boozy brioche French toast with strawberries, Grand Marnier and fresh whipped cream. Take soft scrambled eggs, fold in scant amount of heavy cream at the end and serve with chives and caviar. Elevate scrambled eggs with a grated cheese such as asiago and some prosciutto. “Throw in some spinach. That just makes it something different. It's not your standard omelet with cheddar cheese.” Make French toast and sweeten it with chocolate whipped cream by adding sugar, cocoa powder and vanilla to heavy cream and whipping until fluffy. FOR A REALLY EASY BREAKFAST Try chocolate chip pancakes served with whipped cream and bananas. If you want to make French toast, jazz it up with cinnamon and toasted walnuts. Soak slices of banana in warm maple syrup and top on the French toast.
